I’m not one for snack or energy bars, especially since they seem to be made with increasingly more amounts of refined sugar and chocolate-y drizzle, but the vegan Go Macro Bars have always been my go to. Not only are they vegan, but the bars are certified organic, certified clean, and come in many allergen free flavors. Plus, let’s be honest sometimes you need an easy pick-me-up on the go!
Go Macro Bars, are tasty, but they can get costly. Making similar bars at home without any artificial preservatives may be the way to go! Recreating any of the Go Macro brand flavors is relatively easy, but since I don’t’ have a nut-allergy and love the rich decadence of peanut butter, I decided to give a protein rich bar a go. This recipe is easy, tasty, and plant-based protein packed – enjoy!
Homemade Peanutty Macro Bars
Yield: 8-10 bars, cut in squares.
Ingredients
2 cups smooth natural peanut butter
1/3 cup liquid sweetener (I like maple syrup, but coconut or brown rice syrup also works)
2 Tb vegan protein powder
1 cup puffed/crispy brown rice cereal
½ cup vegan chocolate chips
½ cup raw peanuts
Instructions
Combine peanut butter, raw peanuts, protein powder, and cereal in a food processor.
Pulse until the mixture combines, creating a semi-smooth dough, where some tiny chunks remain.
Add the liquid sweetener and pulse until the mixture becomes smoother.
Add the chocolate chips and pulse to chop, but not completely. Some chunks are ok.
Pour the mixture onto a parchment-lined surface.
Put another piece of parchment on top of the mixture and using a rolling pin, roll the dough out to an even thickness. About ½ inch.
Cut the bar into squares. Store in an air tight container in the fridge or freezer.
