Nourish: No Dinner, and No Energy: What to Make when you’re Running on Empty

I’ve been there way too many times to count: I’ve had a long day of rehearsals, working, and running around. All I want to do is collapse on my bed and watch Netflix—but, then, my stomach starts rumbling. I haven’t meal-prepped. I’m in trouble.

But you don’t have to be! A filling, healthy dinner is within reach.

My mom always told me: no matter what, make sure you always have potatoes and eggs. It sounds like a weird combo, but hear me out.

For one thing, potatoes cook in the microwave, and it only takes about three minutes! My favorite thing to do for a quick dinner is grab a potato, wrap it in damp paper towel and microwave it on high for 3-4 minutes. Once the potato is soft, I slice it into round slices and sauté it in some vegetable oil, tossing on my favorite seasonings: parsley, paprika, and a hint of sea salt.

After those are done, I top them with a sunny-side-up egg. If I’m feeling extra fancy, I’ll throw an avocado, salsa, some cheese, or some turkey bacon on top! Voila—you’ve got a pretty well-rounded breakfast for dinner, and it only took you about 20 minutes from start to finish.
