Coconut oil has a pretty high smoke point. That basically means you can pan-fry with it at higher temperatures than with olive oil. So, have at it with a tropical chicken stir-fry!
Coconut oil is NOT that different in fat content than butter. It actually may have more saturated fat: but, it has a higher concentration of good things in it. So, pick your battles.
It works in smoothies, and in coffee. Yup, you can drop some in for coconutty flavor, and the richness will keep you fuller longer.
You CAN bake with it. Think of it as a butter substitute. But, don’t expect it to taste like butter.
